Dessert and architecture aren’t normally used in the same sentence. But Ukranian pastry chef Dinara Kasko is the exception to the rule. Her geometric cakes are a combination of architecture, baking, and mathematical inspiration. Kasko creates her geometric cake structures through silicone molds that Kasko makes herself using algorithmic graphical editors and a 3D printer. Choosing to retire from her architectural training Kasko combined her passion for curating geometric cakes with her education.

The Decadent Filling
Recently Kasko’s most notable creation features a geometric origami-inspired cake. The stark red cheesecake contains layers of apple compote, a chocolate sponge center, caramel cheese mouse and crunchy nuts.”I always work on textures and flavors, so I created special recipes for this mold” says Kasko. What is especially interesting is Kasko’s ability to combine different textures into the interiors of her cake. Each geometric cake contains a uniform layer of filings that complement and contrast each other. The Process
Creating the red origami cake was not easy for Kasko. The first part of the process involved learning origami paper folds. And Kasko’s first foray into the ancient art was the Miura fold. “I spent a great amount of time folding sheets of paper and learning methods and principles of origami”.Inspired by an origami scheme devised by Japanese Astrophysicist Koryo Miura, Kasko practiced similar folds. Miura’s scheme was a fold that would work with solar panels in space. Using this same fold, Kasko made her mold through 3D modeling software. Eventually, through a variation of several folds, papers and sizes Kasko created her masterpiece. Additionally, the geometric cake itself was specifically curated for so good magazine’s 20th issue to match the rhubarb color of the new edition. Kasko’s most famous creation is the 3*3*3* sphere cake that is smothered in a deep red glaze containing a raspberry and pistachio interior.
